Allspice
Used in 3 recipes on RecipeWiki.
Allspice is the dried berry of a tropical evergreen tree, and its name comes from a scent that suggests clove, cinnamon, nutmeg and black pepper at once. This page covers the ground spice. It is warm and slightly peppery, with a numbing clove edge if overused, so a little goes a long way. In Jamaica, where the berries are called pimento, it is central to the marinade for Jerk Chicken, and it adds quiet depth to the lentils and rice of Mujaddara. Ground allspice fades within months, so buy small jars, or grind whole berries as needed.
