Cocktail cherry
Used in 2 recipes on RecipeWiki.
A cocktail cherry is a cherry preserved in syrup, often flavoured with cherry liqueur, and added to a drink as the last thing before it is served. The better kind are dark, almost black-red, with a dense, chewy texture and a deep, sweet flavour with a hint of almond; the bright red ones are bleached and dyed and taste mostly of sugar. A single cherry sits in the bottom of the Manhattan and finishes the Aviation, where it echoes the maraschino liqueur in the glass. Once the jar is open, keep it in the fridge and fish cherries out with a clean spoon so the syrup stays good.
