Maple syrup
Used in 3 recipes on RecipeWiki.
Maple syrup is the sap of sugar maples boiled down until thick, with a flavour of caramel, vanilla and a faint woody note that ordinary sugar syrup lacks. Darker grades taste stronger and more robust; lighter ones are more delicate. Make sure the label says pure maple syrup, since maple-flavoured syrups are mostly sugar and flavouring. It is the classic pour over a stack of Buttermilk Pancakes or slices of French Toast, warmed slightly so it soaks in. Once opened, keep the bottle in the fridge, where it lasts for months.

Recipes with maple syrup

Buttermilk Pancakes
Thick American-style pancakes raised with buttermilk and bicarbonate of soda, mixed in under a minute so the batter stays lumpy.

Cinnamon Bun Concoction
Two tubes of shop-bought cinnamon rolls, cut into pieces and baked in a maple custard. It comes together in ten minutes and feeds a table.

French Toast
Thick slices of stale bread soaked in an egg and milk custard, then fried in butter over medium heat so the centre sets without the crust burning.
