Mushroom
Used in 2 recipes on RecipeWiki.
Fresh mushrooms on this page means ordinary cultivated mushrooms, such as chestnut or white button, rather than dried ones. Raw, they are mild and spongy; cooked well, they shrink, turn meaty and develop a deep, savoury flavour. Mushroom Risotto relies on that browned depth, and Silky Miso Mushroom Ramen layers it with miso. The key is a hot pan with plenty of space: crowd them and they release water and stew to a grey, rubbery finish, so cook them in batches and salt them once they have coloured. Store them in a paper bag in the fridge, never sealed plastic, and wipe or briefly rinse them just before cooking.
