Raisin
Used in 6 recipes on RecipeWiki.
Raisins are dried grapes, sweet and chewy with a concentrated, slightly caramel and winey flavour. This page also covers the unsulphured kind some recipes ask for: some raisins, especially pale golden ones, are treated with sulphites to keep their colour, and choosing unsulphured fruit avoids a sulphite allergen declaration. They are a feature of Russian Easter baking, studding the tall, sweet bread of Kulich, and a few dropped into bottles of homemade Kvass help the fermentation along. Soak them in warm water, tea or rum for fifteen minutes before baking, so they plump up and do not draw moisture from the dough.
