Strawberry

Used in 3 recipes on RecipeWiki.

Strawberries, fresh and frozen, are both covered on this page, and each has its job. Fresh berries at their peak are fragrant, juicy and sweet with a light acidity; they crown a Pavlova, where their sharpness cuts the cream and meringue. Out of season they can be watery and pale, so choose by smell rather than size. Frozen strawberries are usually frozen ripe and are ideal for blending, giving a Frozen Strawberry Daiquiri its body and chill without diluting it with too much ice. Wash fresh berries only just before using, and hull them after rinsing so water does not soak in. Keep them unwashed in the fridge, but serve at room temperature for the best flavour.
