Vinegar

White vinegar, the clear, colourless kind this page covers, sometimes sold as distilled or spirit vinegar, is sharp and clean-tasting, with none of the fruit or malt of cider or wine vinegars. That neutrality is the point: it adds pure sourness without changing the flavour of a dish. In Jamaica it is the base of the escovitch pickle, heated with onion and peppers and poured over fried fish in Escovitch Fish, and in Mexican cooking it sharpens Tacos al Pastor. Because it is harsher than other vinegars, start with less than you think and taste. It keeps indefinitely in a cupboard.

What else can I make with it?
