Blanco tequila
Used in 2 recipes on RecipeWiki.
Blanco tequila is tequila bottled unaged or only briefly rested, so it tastes most directly of the cooked blue agave it is distilled from: green, peppery and faintly vegetal, with a clean bite. Because no barrel has softened it, it cuts through citrus and salt, which is why it is the spirit in a Margarita and a Paloma. Look for a label saying it is made from 100 per cent agave; tequila without that wording can include other sugars. Keep it upright, away from heat and light. It needs no chilling in the bottle, since the shaker and the ice do that job.
