Used in 2 recipes on RecipeWiki.
Button mushrooms are the young, closed-cap white mushrooms sold everywhere, mild and slightly earthy raw and much more savoury once their moisture has cooked off. They stay firm and pale, so they suit creamy dishes where a darker mushroom would muddy the colour: sliced into the sauce of Chicken à la King, or folded through the rich filling of Lobster Thermidor. Do not crowd the pan; too many at once release water and stew instead of browning. Wipe or brush them clean rather than soaking, and store them in a paper bag in the fridge, where plastic makes them slimy within days.
