Dark chocolate is the form this page covers: chocolate made mostly of cocoa solids and cocoa butter, with less sugar than milk chocolate and little or no milk. Bars of around 70 per cent cocoa give a bittersweet, roasted flavour with fruity notes that suits baking without tipping into sweetness. It melts to a glossy pour for Dark Chocolate Mousse, sets the fudgy middle of Dark Chocolate Brownies and coats Ptichye Moloko. Melt it gently over barely simmering water, or in short bursts in a microwave, stirring often. Keep every utensil dry: a few drops of water make melted chocolate seize into a stiff, grainy lump.

Brown Butter Chocolate Chip Cookies
Chocolate chip cookies made with browned butter and a long overnight rest, which deepens the flavour and stops them spreading thin.

Chilli con Carne

Dark Chocolate Brownies
