Corn tortilla
Used in 5 recipes on RecipeWiki.
Corn tortillas are thin flatbreads pressed from masa, a dough of maize that has been cooked with lime (the mineral, not the fruit) and then ground. That process gives them their toasty, nutty corn flavour and lets them bend without cracking. They carry Carnitas, Birria de Res and Tacos al Pastor, and this page also covers the usual accompaniments served alongside: chopped white onion, coriander and lime wedges. Warm each one on a dry, very hot pan for about thirty seconds a side, until soft and lightly spotted, then stack them in a folded tea towel so they steam and stay supple. Cold tortillas crack and tear.
