Egg noodle
Used in 2 recipes on RecipeWiki.
Egg noodles are wheat noodles enriched with egg, which gives them a yellow colour, a springy, slightly chewy bite and a mild, rich flavour. This page covers fresh egg noodles and fine egg noodles. Fresh ones are the choice for Beef Chow Mein, where they are boiled briefly, drained well and then fried so some strands crisp at the edges; fine noodles cook in minutes and go into Chicken Noodle Soup. Cook them just short of tender, because they keep softening in a hot pan or bowl. Rinse stir-fry noodles briefly under cold water and toss with a little oil so they do not clump.
Recipes with egg noodle

Beef Chow Mein
Beef coated in cornflour and seared in batches in a pan hot enough to smoke, with the sauce going in only at the very end.

Chicken Noodle Soup
Poached chicken and vegetables in a clear stock, with the noodles cooked apart so the broth stays clean rather than thick and starchy.
