Falernum
Used in 2 recipes on RecipeWiki.
Falernum is a sweet Caribbean syrup, or a lightly alcoholic liqueur depending on the bottle, flavoured with lime zest, ginger, clove and almond. It is closely associated with Barbados, though its exact origins are uncertain. In a glass it tastes of warm spice and citrus over a silky, sugary body, and a small measure adds depth and length to rum drinks. That is its role in the Rum Swizzle and the Zombie, where it partners rum and citrus. Homemade versions are straightforward, made by steeping zest and spices in rum and sweetening with syrup. Keep an opened bottle in the fridge, especially the non-alcoholic kind, which spoils sooner.
