Gem lettuce
Used in 2 recipes on RecipeWiki.
Baby gem lettuce, which this page covers, is a small, compact cos-type lettuce with crisp, cupped leaves and a sweet, juicy heart. Its leaves have more crunch and less bitterness than most salad leaves, and they stand up to creamy dressings that would flatten softer lettuce. The cupped inner leaves make natural little boats for Shrimp Cocktail, and torn leaves give the Waldorf Salad a fresh, watery crunch against apple and walnut. Wash the leaves and then dry them thoroughly, in a salad spinner or a clean tea towel; dressing slides off wet lettuce and pools in the bowl. Whole heads keep for several days in the fridge.
