Mayonnaise
Used in 6 recipes on RecipeWiki.
Mayonnaise is an emulsion of egg yolk, oil and an acid such as lemon juice or vinegar, whisked until thick and glossy. It tastes rich and gently tangy, and it is the binding dressing behind several cold dishes here: the Russian salads Olivier Salad, Herring Under a Fur Coat and Salat Mimosa, as well as Devilled Eggs, Waldorf Salad and Shrimp Cocktail. Shop-bought or homemade both work. Homemade mayonnaise contains raw egg, so keep it in the fridge and use it within a few days. Fold it through salads with a light hand, so layered dishes stay distinct rather than turning to mush.
