Kefir
Used in 2 recipes on RecipeWiki.
Kefir is a fermented milk drink made with a culture of yeasts and bacteria known as kefir grains. It is thinner than yoghurt, with a tart, tangy flavour and sometimes a slight fizz. In Okroshka, the Russian cold summer soup, kefir is mixed with cold still mineral water to make the broth poured over chopped vegetables, herbs and egg. This page covers that mixture too. In Oladyi, small thick pancakes, its acidity reacts with bicarbonate of soda to lift the batter. Use plain, unflavoured kefir. If it separates in the bottle, give it a firm shake before measuring.
