Peanut

Used in 2 recipes on RecipeWiki.

Roasted peanuts, the form this page covers, are technically legumes rather than nuts, and roasting turns their raw, beany flavour sweet, toasty and rich. In Sichuan cooking they add crunch and a mellow sweetness against heat and numbing pepper: tossed through Kung Pao Chicken at the very end so they stay crisp, and scattered, chopped, over Dan Dan Noodles. Buy unsalted ones for cooking so you control the seasoning, or fry raw, skinned peanuts gently in oil until golden. Their oil turns rancid with time, so keep them sealed in a cool place and taste one before using an old bag.
