Pork sausage on this page covers two different things: fresh pork sausages and a smoked pork sausage. Fresh sausages are raw, seasoned minced pork in a casing, and need thorough cooking. They are fried or grilled slowly until browned all over for the Sausage and Bacon Breakfast Bap, since a fierce heat splits the skins before the middle cooks. The smoked sausage is already cooked and brings a deep, smoky savouriness. It is sliced into Solyanka, the sour Russian soup of mixed meats, pickles and olives. Fresh sausages keep a few days in the fridge; smoked ones keep considerably longer.
