Rhum agricole
Used in 2 recipes on RecipeWiki.
Rhum agricole is rum distilled from fresh-pressed sugar cane juice rather than molasses, and it is associated above all with the French Caribbean. It tastes grassy, vegetal and bright, with an earthy, funky edge and less sweetness than molasses rum. Unaged blanc is the spirit of Ti' Punch, which is little more than rhum, lime and cane syrup, so its quality is the whole drink. In some versions of the Mai Tai, an aged rhum agricole is used alongside other rum; the recipe here also allows another aged rum instead. Its high strength is worth measuring, not guessing.
