Spinach is a tender leafy green with a mild, slightly mineral, faintly sweet flavour that becomes richer as it cooks. Its most important quality is how much it shrinks: a mound of fresh leaves wilts to a fraction of its size in a minute or two. That is why Creamed Spinach and Saag Paneer start with what looks like far too much. In Chickpea and Spinach Stew it is stirred in at the end and just wilted. Wash it well, as it holds grit. After cooking, squeeze out excess water before adding cream or sauce, or the dish turns watery. Use bagged leaves quickly, before they turn slimy.
