Bean
Used in 3 recipes on RecipeWiki.
This page brings together two quite different beans used across RecipeWiki: fresh green beans and dried large white beans. Green beans are eaten pod and all, crisp and grassy when blanched briefly, and turn khaki and soft if boiled too long; they are dressed with nutty brown butter in Green Beans with Brown Butter and Almonds and go into Chicken and Prawn Paella. The dried white beans are the creamy, thin-skinned beans of Fabada Asturiana, simmered slowly with pork and sausage. Soak them overnight in plenty of cold water, and keep the simmer gentle so the skins stay whole.
