Salted herring fillets are the silver, oily fish of the North Sea and Baltic cured in salt, which firms the flesh and gives it a deep, savoury, gently fishy flavour quite unlike fresh herring. This page covers salt herring as it is sold in Russian and Eastern European shops, as fillets in oil or brine. It is layered under beetroot, potato and mayonnaise in Herring Under a Fur Coat, and chopped with apple and onion into Forshmak, a spreadable herring pâté. Very salty fillets can be soaked in milk or cold water for an hour before use. Check for and pull out the fine pin bones with tweezers.
