Jasmine rice
Used in 2 recipes on RecipeWiki.
Jasmine rice is a long-grain white rice grown mainly in Thailand, with a delicate floral, almost popcorn-like scent and grains that cook up soft and slightly clinging rather than fully separate. This page also covers other long-grain white rice as the alternative. It is the natural partner for Green Curry with Chicken and Thai Basil, soaking up the coconut sauce, and in Chicken Congee it simmers in plenty of stock until the grains break down into a silky porridge. Rinse it in several changes of cold water until the water runs nearly clear, which removes surface starch and stops it turning gluey. Store it airtight, as the aroma fades with age.
