Kidney bean
Used in 3 recipes on RecipeWiki.
Kidney beans are large, kidney-shaped red beans with a thick skin, a creamy, floury inside and a mild, slightly sweet flavour that takes on the seasoning around it. This page covers dried beans and tins. In Jamaican cooking they are the peas in Rice and Peas, simmered with coconut milk, and in Slow-Cooked Black Dal a handful cooks alongside the black lentils until both turn velvety. Dried kidney beans must be soaked, then boiled hard for at least ten minutes before simmering until tender, because undercooked red kidney beans are unsafe to eat. Tinned beans are already cooked and only need rinsing.
