Sherry vinegar
Used in 3 recipes on RecipeWiki.
Sherry vinegar comes from the sherry region of Andalucía, where it is aged in oak casks, often in a solera, giving it a rich amber colour and a nutty, woody, rounded sharpness that sits between wine vinegar and balsamic. In Spanish cooking it brightens and rounds at once. A spoonful is blended into Gazpacho to lift the tomatoes, and it sharpens the brava sauce of Patatas Bravas. Because it is more aromatic than ordinary wine vinegar, add it in small amounts and taste. Look for one labelled Vinagre de Jerez, which marks the protected name from the area around Jerez de la Frontera.
