Undyed haddock
Used in 2 recipes on RecipeWiki.
Undyed smoked haddock is haddock that has been lightly brined and cold-smoked without the yellow colouring that gives some smoked fish its bright dye, leaving pale, creamy-beige flesh. This page covers it as fillets or pieces. Its flavour is gently smoky and sweet, with large, tender flakes. Poached gently, it flavours its cooking liquid, which becomes the base of Smoked Haddock Chowder, and its flakes are folded through the curried rice of Smoked Haddock Kedgeree. Cook it briefly, just until it flakes, or it toughens. Choose fillets that smell clean and smoky rather than fishy, and check for pin bones.
