Worcestershire sauce
Used in 6 recipes on RecipeWiki.
Worcestershire sauce is a thin, dark, fermented condiment made with vinegar, molasses, tamarind, anchovies and spices. It tastes salty, sour and sweet at once, with a savoury depth from the anchovies, and a few dashes deepen a sauce without anyone quite identifying why. It seasons the pan sauce of Steak Diane and the gravy of Beef and Ale Stew with Herb Dumplings, sharpens the sauce for Shrimp Cocktail, and adds a savoury kick to a Michelada and to Caesar Salad. Because it contains fish, check the label when cooking for vegetarians or anyone avoiding fish; versions made without anchovy exist. An opened bottle keeps for a long time.
