What they have in common is that almost none of the time is yours — the recipes say where the attention is actually required, so that a twelve-hour dish can be planned around rather than stood over. Several of them are the best things in this collection and none of them is difficult; they are simply long.

Shoyu Ramen with Chashu Pork
A soy-based broth that tastes long-cooked because it is. The pork rolls the night before, which is most of the work and none of the effort.

Pho Bo
Charring the onion and ginger before they go near water is what makes the broth smell like pho rather than beef soup. Everything else is patience.

Tagliatelle al Ragù
