Chilli oil
Used in 5 recipes on RecipeWiki.
Chilli oil, as used in these recipes, is the Sichuan-style condiment: oil poured hot over dried chilli flakes and often spices, leaving a red oil with a sediment of crisp chilli at the bottom. It brings a toasty, fragrant heat rather than sharp burn. It is spooned into the sauce for Dan Dan Noodles and Mapo Tofu, drizzled over Smashed Cucumber Salad, and served at the table with Chicken Congee and Silky Miso Mushroom Ramen. This page covers both chilli oil cooked in and oil added to serve. Stir the jar before using it so you get the flakes as well as the oil. Kept sealed, it lasts for months.

Silky Miso Mushroom Ramen

Smashed Cucumber Salad
