Coconut milk
Used in 3 recipes on RecipeWiki.
Coconut milk is made by pressing grated coconut flesh with water, producing a rich, white liquid that is mildly sweet and nutty, with a fat content that gives curries their silky body. Tinned versions separate into thick cream on top and thinner milk below; Thai cooks often fry curry paste in that cream until the oil splits out, a technique behind dishes like Green Curry with Chicken and Thai Basil. In Rice and Peas it cooks into the rice with thyme and beans, perfuming every grain. Shake the tin well unless a recipe wants the layers. Simmer rather than boil hard, which can make it grainy. Leftovers keep for a few days covered in the fridge.
