Cream coconut
Used in 4 recipes on RecipeWiki.
Cream of coconut is a thick, heavily sweetened coconut product made for drinks, and it is not the same as coconut cream or coconut milk, which are unsweetened. It tastes of rich, toasted coconut and sugar, with a texture close to condensed milk. It gives the Piña Colada, the Painkiller, the Bushwacker and the Frozen Melon Colada their body and sweetness at once, so substituting plain coconut cream leaves a drink thin and sour. The fat separates in the tin, so shake it hard or stir it smooth before measuring. Once opened, transfer it to a covered container in the fridge and use within a week or so.
