Pineapple juice
Used in 7 recipes on RecipeWiki.
Pineapple juice is sweet, tangy and tropical, with enough acidity to keep it from tasting flat in a drink. It is the base of the Piña Colada, where it meets coconut and rum, and of the Painkiller, and it lengthens the Bahama Mama and Blue Hawaii. Shaken hard with ice it develops a fine, lasting foam, which is why a Singapore Sling often arrives with a frothy head. Choose unsweetened juice where possible, since sweetened juice makes already-sweet drinks cloying. Once a carton is open, keep it in the fridge and use it within a few days, before it starts to ferment and taste fizzy.
