Chestnut mushroom
Used in 7 recipes on RecipeWiki.
Chestnut mushrooms are the brown-capped form of the common cultivated mushroom, firmer and slightly earthier than white button mushrooms, which the recipes accept as a substitute. They hold their shape well and brown to a deep savoury colour, the base of Beef Stroganoff, Mushroom and Barley Soup and the baked Russian starter Mushroom Julienne. The key is a hot pan and room to spare. Crowded, they release water and stew grey; given space, the liquid boils off and they brown. Wipe them with damp kitchen paper rather than soaking them, and keep them in a paper bag in the fridge so they do not sweat.
