Pork mince
Used in 8 recipes on RecipeWiki.
Pork mince is ground pork, usually from shoulder or belly, mild and slightly sweet, with enough fat to stay juicy and tender when cooked. That fat is why it is so often mixed with beef, which is leaner: in Kotlety and Golubtsy it keeps the mixture moist, and in Tagliatelle al Ragù it adds richness to the slow sauce. It also binds well, which helps meatballs hold together. Choose mince with roughly fifteen to twenty per cent fat for these dishes; very lean mince cooks up dry and crumbly. Use it within a day or two of buying, or freeze it flat in a bag.
