Ice on this page covers every form the drinks use: cubes for shaking, cubes for serving, and crushed ice. In a cocktail it is an ingredient rather than packaging. Shaking or stirring with it chills the drink and adds the water that softens the alcohol, so the size and hardness of the ice change the result. Large, solid cubes melt slowly and suit spirit-forward drinks such as the Old Fashioned and Negroni; crushed ice dilutes fast and frosts the glass in a Mojito or Rum Swizzle. Use fresh ice from a clean tray, since ice absorbs freezer smells. Outside the bar, it quickly cools the Wet Brine for Chicken and Pork.
